📍 食譜 :
蛋白70克
砂糖50克
糖粉40克
1至2滴色膏

做法:
蛋白70克隔熱水加熱, 加入砂糖50克拌勻至糖溶, 蛋白溫度不超過50度攝氏度, 取走熱水, 高速打發至8成, 篩入糖粉40克低速打勻, 轉高速打至九成, 加1至2滴色膏打勻, 放入擠袋擠粒粒, 擠在舖有烘焙紙的烤盤上, 放入已預熱烤箱, 110度上下火烤約一小時50分鐘, 依實際情況調整。

📍 Recipe :
70g egg whites
50g caster sugar
40g icing sugar
1 to 2 drops of food coloring

Steps:
1. 70g egg whites, heated with thermal water
2. Add 50 grams of granulated sugar and mix well until sugar dissolves
3. egg white not exceed 50 degrees Celsius
4. Take away the hot water
5. Beat on high speed to 80%
6. Sift in icing sugar 40g, beat well at low speed
7. Turn to high speed, beat until 90%
8. Add 1 to 2 drops of food coloring, beat and mix well
9. Put in the piping bag, pipe on baking tray with baking paper
10. Put in preheated oven 110 degrees centigrade for about 1 hour and 50 minutes, adjust according to actual situation
11. Leave cool, enjoy this delicious and crisp meringue !!
