These adorably cute Halloween cupcakes are a treat for your eyes and palette. They are gluten-free, low-carb,keto-friendly, and diabetic- friendly.

Ingredients

For the cake base:
70 grams of unsweetened baking chocolate
6 tbsp of softened unsalted butter
2 eggs at room temperature
3 tbsp of Sweetener ( have used Truvia)If you are using any other sweetener adjust the measurement accordingly
4 tablespoons of Allulose (If you don't have it then increase the sweetener of your choice by adding in at least 1 more tbsp)
1/4 tsp of vanilla essence
1 cup Almond Flour
½ tsp Baking powder

For the frosting:
½ cup of whipped unsalted butter
½ cup of whipped cream
¼ cup of whipped cream cheese
3 tbsp of Truvia
Food grade purple color

Directions for the cake base
1) Take 70 gms of unsweetened baking chocolate in a microwaveable bowl.
2) Next, add 6 tbsp of softened butter to it.
3) Heat both of them in a microwave oven for 30 seconds or till the butter starts to melt on top of the chocolate.
4) Mix the butter and chocolate till it starts to look like a ganache. It should look smooth and silky.
5) In another bowl crack 2 eggs that are at room temperature.
6) Add 3 tbsp of sweetener (I used Truvia) if you use some other sweetener then you might have to adjust accordingly.
7) Add 4 tbsp of Allulose(this gives it an all-rounded sweetness and richness). However, if you don't have it then increase 1 tbsp of Sweetener.
8) Add 2 tbsp of heavy cream and mix everything well.
9) To this wet mixture add 1 cup of Almond flour.
10) Next, add ½ tsp of baking powder and mix all the dry and wet ingredients very well.
11) Now add in the chocolate and butter mixture in the batter and mix it till everything gets incorporated well.
12) Pour it into silicone molds and put it into the oven to bake at 350 degrees Fahrenheit for around 20-25 minutes. Keep checking after 15 minutes to make sure that the cupcakes do not burn.

Directions for the frosting
1) In a bowl add ½ cup of whipped unsalted butter
2) Add 3 tbsp of powdered Truvia or sweetener of your choice(adjust the measurements)
3) Mix well. Then fold ½ a cup of the whipped cream into it.
4) Next, add ¼ cup of whipped cream cheese and fold everything together.The cream cheese gives a lot of stability to the frosting.
5) Whip everything together and fill it in a piping bag.
6) Once the cupcakes are cooled completely cut a little part from the top and make a small hole(do not make the hole all the way through though). 7)You could use the back portion of a piping tip to make the whole.
8) Fill the hole with the frosting and decorate the cupcake.
