Happy Diwali to all of you out there!
This Kaju Katli/Cashew squares recipe is Keto friendly, Diabetic-friendly, and gluten-free.
They are absolutely delicious and a favorite in my house. They are very quick to make and use very few ingredients.
I hope you like them. You can also easily make ladoos or keto bombs out of the same mixture.

Ingredients
1 and a ½ cup of Raw, Frozen cashews (that have to be made into a powder)
2 tbsp of Ghee/clarified butter
¼ cup of whole milk
¼ cup of whipping cream
¼ tsp of cardamom powder
3 tbsp of milk powder
2 and a ½ tbsp of Truvia(sweetener)

Directions
1) Put the cashews overnight or for at least 3-4 hours in the freezer.
2) Pulse grind the cashews in small batches in a grinder or a spice /coffee grinder. Do not over grind the cashews as you will get cashew butter instead of cashew powder.
3) Sieve the powdered cashew.
4) In a medium-hot nonstick pan add 2 tbsp of Ghee/Clarified butter.
5) Next, add ¼ the cup of whole milk.
6) Then add ¼ cup of whipping cream.
7) Then add ¼ the tsp of cardamom powder.
8) Mix everything well and bring it to a boil.
9) Add 3 tbsp of milk powder to the simmering liquid and keep on stirring.
10) With the help of a spatula, you can break any milk powder lumps.
11) Next, add the Truvia or any sweetener of your choice. Adjust the amount of sweetness if you are using any other sweetener.
12) Mix everything very well.
13) Once the sweetener is dissolved thoroughly add in the cashew powder.
14) Mix and fold the cashew powder on medium heat till the mixture starts to leave the sides of the pan. It will take around 3-5 minutes.
15) Take a little of the mixture, cool it, and try to roll it into a ball. If it can be rolled into a ball your dough is ready.
16) Transfer the mixture onto a greased nonstick plate or parchment paper.
With the help of a spatula form a thin square around ¼ the inch of thickness.
17) Put it in a refrigerator for at least 3-4 hours, till it gets really firm.
18) Take out of the refrigerator and cut it into shapes of your choice or you could also make ladoos/keto bombs. Kaju Katli is usually diamond-shaped.
