Recipe:
For the ganache:
☕️50g (1.7oz) double espresso or 2 tablespoons of
instant coffee dissolved in 50g (1.7oz) boiling water
☕️100g (3.5oz) dark chocolate, melted
☕️1 tablespoon of coffee liqueur or dark rum, optional
but highly recommended
For the meringue:
☕️4 large egg whites
☕️a pinch of fine sea salt
☕️200g (7oz) granulated sugar
For the cream filling:
☕️150g (5.3oz) mascarpone cheese or cream cheese
☕️200g (7oz) heavy cream
☕️50g (1.7oz) brown sugar
☕️2 tablespoons of coffee liqueur, for example, Kahlúa
Little extra for dusting:
☕️unsweetened cocoa powder
☕️icing sugar
Bake at 355F (180C) for 15 to 20 minutes
