Injeolmi is a rice cake made with sweet rice (glutinous) flour. Soft, chewy, mildly sweet and nutty. A Korean favorite that's great for breakfast, snack and dessert.
Ingredients
2 cups rice flour
2 Tbs sugar
1 tsp sea salt
1 1/4 cup water
1/2 cup roasted soybean flour (Kinako)
a sprinkling of sugar and salt for the soybean flour
