Ingredients:
- 500g sliced beef (flank steak, topside or sirloin) I used topside
- 1 tsp baking soda/sodium bicarbonate
- pepper
- little water

- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced

- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil

- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1-inch ginger, minced
- 1 tablespoon Chinese cooking wine – Shaoxing I use
- ½ teaspoon sugar

- cornstarch slurry - 1 tbsp cornstarch 1 tbsp water
- 1 teaspoon chilli flakes (optional, for a bit of heat)
- 2 spring onions, chopped (optional)
- Toasted sesame seeds for garnish (optional)
- Steamed rice for serving
