We are happy to share, this, just one seasoning pork stew!
Adapted from 《Food from Luang Namtha Laos, The Boat Landing Cookbook》, this Tai Dam pork stew is a favourite in Luang Namtha Black Tai villages and is also one of our comfort food because of the simple ingredients and one seasoning used, which is salt (option to add chicken stock powder, which we omit because searing the pork slices help to create a well seasoned, all rounded flavour to this wonderful stew), just 2 types of aromatics lemongrass and bird's eye chilies, choy sum for vegetable, dill for herbs and last but not least, one important ingredient, ground toasted rice, which definitely is the core that bind the whole stew together.
This round, we had cook ours with lesser liquid 3.5 cups, thus ours look porridge-like. The original are definitely more "soupy" which we love as well! You can also opt for chicken, duck, turkey or tofu as protein in this stew.

A Little Note about Tai Dam:
The Tai Dam are an ethnic minority predominantly from northwest Vietnam and Laos. They are part of the Tai peoples and ethnically similar to the Thai from Thailand and the Lao from Laos. Tai Dam means “Black Tai”. This name comes from the black clothing worn by the group, especially females.

这道黑傣族炖猪肉料理改编自《Food from Luang Namtha Laos, The Boat Landing Cookbook》(点击上方链接和视频结尾查看书中另一道菜谱)。它是琅南塔黑傣族的村子里的一道家常菜,也是我们的心头好,因为食材简单加上只要一种调味料:盐(可以选择加鸡粉,但我们选择不加,因为猪肉的烹煮方式已经让炖菜非常入味),两种香料:香茅和小米辣,蔬菜我们选用菜心 (可选香港用菜心),香草用莳萝,最后但同样重要的配料:现磨的烤糯米,也是将整个炖菜结合在一起的核心。这次我们用了较少的汤汁,只有3.5杯,所以炖菜看起来有点像粥。原版汤汁更多,我们也非常的喜欢!你也可以用鸡肉、鸭肉、火鸡或豆腐作为蛋白质。希望你喜欢我们这次的视频,记得订阅我们的频道,查看更多食谱!

关于黑傣族的小知识:
黑傣族是主要来自越南西北部和老挝的少数民族。他们是泰族的一支,与泰国的泰人和老挝的老族在民族上相似。黑傣族的意思是“黑色泰人”。这个名字来源于该群体,尤其是女性,所穿的黑色衣服。
