It's MANGO season! What better cake to make than a soft, light, and airy sponge cake with sweet ripe mangos and cream — the perfect cake for the summer! Decorated just as you would see it in a Chinese bakery, with mangos overlapping one another all around the cake.

Yield: one 8 inch cake
**Ingredients**
Sponge Cake:
5 large eggs, separated
80g milk
50g oil (corn/vegetable)
1/2 tsp vanilla
80g cake flour
80g sugar
Bake at 300°F for 50-55 mins~
EDIT: there is a mistake in the video!! The caption says 350°F but it is actually 300°F. Sorry!!
Cream*:
2 cups heavy cream
1/4 cup sugar
*make more if needed later to decorate the outside of the cake
Assembly:
4-5 ripe mangos
optional: other fruits for decoration
optional: white & milk chocolate for chocolate plaque.
optional: 1 tbsp apricot jam + 1 tbsp water for shiny glaze finish.
