Jerk food is one of my favorites, and this week we are doing Jerk Riblets on the Gateway Drum Smoker!

I found these riblets at my local grocery store. They are basically just ribs cut into strips and that’s exactly how we treated them.

We didn’t do any trimming on them with them being small. That membrane on the back will render down and you won’t even notice it’s there. We just seasoned them up with the Jammin Jerk from How to BBQ Right and threw them on the grill.

We had our Gateway Drum Smoker fired up and when it hit 250* we put the riblets on and let the pit come up to 275*-300*.

After 1 hour we flipped the riblets over and continued cooking 30 minutes.

After 1.5 hours it was time to wrap. We put them in an aluminum half pan with some squeeze butter, brown sugar, jerk sauce (see below for recipe), pineapple orange juice, and some more Jammin Jerk Rub. Seal them tight with foil and back to the pit.

They took about another hour or so to get to the tenderness I was looking for. Take them out of the pan and place them on the rack and glaze with the jerk sauce for 5 minutes!

After glazing, cut them in to bit size pieces and dig in!

Ingredients

1. Riblets
2. How to BBQ Right Jammin Jerk Rub
3. Parkay Squeeze Butter
4. 1 1/2 cup brown sugar (1 for sauce, ½ for wrap)
5. 10 ounces Pineapple orange juice
6. 2 tbs melted butter
7. ½ cup ketchup
8. ¼ cup apple cider vinegar
9. ¼ cup honey
10. ¼ cup scotch bonnet sauce
11. 2 cloves minced garlic
12. 1 tsp black pepper

Directions

1. For our Jerk sauce combine melted butter, ketchup, apple cider vinegar, honey, garlic, scotch bonnet sauce, black pepper, 1 cup brown sugar, 2 tbs Jammin’ Jerk Rub, and 8 ounces pineapple orange juice. Simmer for 15 minutes.
2. Season riblets with Jammin’ Jerk rub.
3. Place on a 250* pit with a chunk of oak wood. Let pit come up to 275*-300*.
4. After 1 hour flip and cook another 30 min.
5. After 1.5 hours, place riblets in aluminum half pan.
6. Add in Squeeze butter, remaining brown sugar, ½ cup Jerk Sauce, and some more Jammin’ Jerk. Cover tightly and place back on pit for 1 hour or until tender.
7. Once tender, place directly on grate and glaze with jerk sauce. Let sauce set for 5 min.
8. Enjoy!
