This week we are asking the age old question, hot and fast or low and slow?

We are testing this out with some baby back ribs! Start off by just squaring up the rack. Remove the membrane and any excess meat or fat that is hanging. We used olive oil as a binder, but you can use whatever you prefer or nothing at all! For the rub, we are using a rub we are developing, but you can use any bbq rub you want.

For the low and slow ribs we are using our Traeger pellet grill. Set it at 225* and throw the ribs on and let them go for 3 hours.

After 3 hours, wrap the ribs with some apple juice in aluminum foil. Put them back on the grill and continue to cook until tender (somewhere around 200*).

For the hot and fast ribs we are using our Gateway Drum. We ran it at 300* with oak wood. After 1.5 hours, they had a great color so we wrapped them with apple juice in aluminum foil. Cook them until tender (around 205*).
