Method:-


Preparation Time: 20 minutes
Cooking Time: 20 minutes
Total Time: 40 minutes


Ingredients:

3 large potatoes, boiled and mashed
1 cup rajgira flour (amaranth flour)
1/4 teaspoon salt
green chilli
Ginger
Jira, Mohari
1 tablespoon ghee or oil
Optional: cumin seeds, coriander leaves


Instructions:

Step 1: Mix Dough

1. Combine mashed potatoes, rajgira flour, salt, and baking soda.
2. Add ghee or oil and mix.
3. Gradually add water to form a stiff dough.


Step 2: Knead Dough

1. Knead the dough for 5-7 minutes.
2. Cover and let it rest for 10 minutes.


Step 3: Roll Out Dough

1. Divide dough into 6-8 portions.
2. Roll out each portion into a thin circle.


Step 4: Shape Puri

1. Use a cookie cutter or a glass to cut out puri shapes.
2. Gather and re-roll remaining dough.


Step 5: Fry Puri

1. Heat oil in a deep frying pan.
2. Fry puri until golden brown (2-3 minutes).
3. Remove and drain excess oil.


Step 6: Serve

1. Serve crispy and delicious Upvasachi Batata Rajgira Puri.


Tips:

Use boiled and cooled potatoes for best results.
Adjust water to achieve the right consistency.
Fry at the right temperature (350°F).
Experiment with different seasonings.


Variations:

Add cumin seeds or coriander leaves for extra flavor.
Use other farali ingredients like singoda flour or buckwheat flour.
Make puri in different shapes and sizes.
