Method:-


Preparation Time: 20 minutes
Cooking Time: 15 minutes
Total Time: 35 minutes


Ingredients:

1 cup chickpea flour (gram flour/besan)
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon carom seeds (ajwain)
1 tablespoon ghee or oil
Oil for frying
Optional: chili powder, garlic powder, or other seasonings


Instructions:

Step 1: Mix Batter

1. In a bowl, combine chickpea flour, salt, baking soda, and carom seeds.
2. Gradually add water and mix until smooth.
3. Add ghee or oil and mix.


Step 2: Rest Batter

1. Cover and let the batter rest for 10-15 minutes.


Step 3: Heat Oil

1. Heat oil in a deep frying pan or a sev maker.


Step 4: Fry Shev

1. Using a sev maker or a piping bag, press the batter through the holes.
2. Fry until golden brown (2-3 minutes).
3. Remove and drain excess oil.


Step 5: Season (Optional)

1. Sprinkle chili powder, garlic powder, or other seasonings.


Step 6: Serve

1. Serve hot and crunchy shev with your favorite chutney or tea.


Tips:

Adjust water to achieve the right consistency.
Use a sev maker for uniform thickness.
Fry at the right temperature (350°F).
Experiment with different seasonings.
