Easy Camp Chili served in a Cantaloupe Bowl! Easy clean-up! Use cantaloupe pieces as "croutons" with your chili! So good and refreshing! Low power usage - cooked in an instant pot! One pot meal - So Good!

Recipe:

Simple Camp Style Chili in a Cantaloupe Bowl!

1 pound ground beef (leaner preferred)
1 medium onion diced (1 cup)
½ green bell pepper, seeded and diced small
1 rib celery diced small
1 garlic clove minced
½ of an 8 ounce can of Rotel Mild (4 oz total)
1-15 oz can diced tomatoes
1-15 oz can Pinto Beans (rinsed and drained)
1-15 oz can Kidney Beans (rinsed and drained)
½ to 1 cup Beef Broth (or made with Beef Better than Bouillon, tomato juice or V8, as needed to adjust thickness preference
Wedge of lemon

Seasonings:
2 tsp Chili Powder
½ tsp cumin powder
¼ tsp garlic powder
Salt to taste after simmering a few minutes (¼ to ½ tsp depending on added broth, etc.)

Turn on Instant pot to medium sauté and let the pan reach temperature.
Add oil and let heat for a few seconds, and then add ground beef.
Cook until almost browned, and then add onion and continue to brown the meat.
Add the chili powder, cumin, and garlic powder. Next, add the green pepper, celery, garlic, Rotel, pinto and kidney beans and broth. Simmer for at least 30 minutes so the flavors can blend. Taste and adjust salt and other seasonings. Squeeze of lemon on top of bowl off chili for extra brightness

Oregano
Cayenne pepper
Chipotle pepper
Cinnamon
Onion powder
Smoked Paprika
Paprika
Dash sugar or cooked mashed carrot if sweetness needed
Bulgur to bulk up (has texture of ground beef)

Toppings and Garnishes:
Green Onion
Sliced Jalapeno
Salsa – Red or Green
Favorite Hot Sauce
Cheddar Cheese
Lime wedges
Cilantro
Fritos / Tortillas

Serving Suggestions:
Frito Pie – Small Bag of Fritos with Chili on top
Chili Dogs and Burgers
Chili over Rice, Chili Mac, Chili Spaghetti
Chili Taco Salad
Chili Tacos. Burritos, Quesadillas
Chili Cheese Omelet or over scrambled eggs
Chili on Baked potato with chives and cheddar cheese
Chili in a yellow or zucchini squash boat
Chili served in half of a cantaloupe or with cantaloupe “croutons”
