Recipe
(nama chocolate)
100g milk chocolate
50ml fresh cream
10g unsalted butter

(Cocoa Cookie)
40g unsalted butter
20g powdered sugar
A pinch of salt
1 egg yolk
20g almond powder
80g flour
10g cocoa powder

(1) Make the raw chocolate. Crumble milk chocolate into a bowl, add room temperature cream, and heat in a microwave for about 30 seconds at 600W.
(2) Take it out and mix, then add unsalted butter while it is still warm.
(3) Pour the mixture onto a cookie sheet and flatten it, then refrigerate for about 3 hours. (Or if you have a 1/2 size cookie, that's better!)
(4) Make the cocoa cookies. In a bowl, knead together the unsalted butter and powdered sugar at room temperature.
(5) Add the egg yolks and mix well.
(6) Add almond puddle and salt and mix.
(7) Sift in the flour and cocoa powder and mix quickly.
(8) Wrap the dough in plastic wrap and let it rest in the refrigerator for about an hour.
(9) Take out the dough, roll it out with a rolling pin, and cut it to the same size as the raw chocolate. (If you use 1/2 the size of the raw chocolate mold, use the size of 1!)
(10) Cut into 2cm x 2cm squares.
(11) Bake in a preheated oven at 170°C for 10 minutes. Remove and let cool.
(12) Take out (3) after it has cooled and hardened, and arrange the cookies in a line without gaps. (In the video, the raw chocolate is folded to make it 1/2 the size! size!)
(13)Cut it into pieces, turn it over and sandwich it with cookies.
