Recipe :
Aloo ke Kofte
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves:3-4

Ingredients:
1 cup Boiled Potatoes, mashed
2 tbsp Flour
1/2 tsp Salt
Orange Food Colour
1 tsp chopped Green Chilies
1 tbsp chopped Coriander Leaves
soaked Raisins
2 tbsp Oil
1/2 tsp Cumin Seeds
1 large Onion, chopped
Salt to taste
1/2 tsp Turmeric Powder
1/2 tsp Red Chili Powder
1 tsp Coriander Powder
1/2 tsp Garam Masala Powder
1 tbsp Ginger Garlic Paste
1 large Tomato
1 tbsp Tomato Ketchup
1 tbsp Cream
1 tsp Kasuri Methi

Method:
Mash well the boiled potatoes till smooth.
Add the cornflour, salt and knead to a smooth dough.
Separate a lemon sized ball of the dough.
Add a pinch of orange red colour to this dough. Add in the chopped chilies, coriander leaves, raisins and mix well.
Break the potato dough into walnut sized balls.
Flatten the ball and place a teaspoon of the coloured dough and cover with the remaining potato dough.
Roll into a smooth ball.
Make all potato balls. Roll the balls in dry flour and fry to a golden colour.
Heat oil in a pan. Add in the cumin seeds and allow to splutter.
Add in the chopped onions and saute till the onions are light golden in colour.
Add in the powdered spices and mix well.
Add in the ginger garlic paste and mix well.
Add in the chopped tomato and mix well.
Cook till the tomato is lightly softened.
Remove from heat and cool.
Grind the masala into a smooth paste with ½ cup water.
Put the paste back into the pan and bring to a boil.
Add in the tomato ketchup. And mix well.
Add in the cream and mix well.
Remove from heat.
Sprinkle the kasure methi.
To serve, place the potato koftas in a serving dish. Pour the gravy over it.
Serve immediately.
