Today’s video is not just about a recipe, it is a Masterclass in Kofta Making.
We encounter many problems while making Kofta. In today’s Masterclass in Kofta, I have shared the solutions to all such problems that you face while making koftas.
TO explain the process easily, I have also shared how to make perfect kofta with 2 examples of Koftas with 2 different stuffing. 1 is Paneer kofta with spinach stuffing and the 2nd is a Lauki kofta with Apricot and khoya stuffing.
To compliment these Kofta, I have also shared, how to make the perfect gravies with 2 examples: a restaurant style red gravy and a restaurant style white gravy.
A kofta dish has 3 components:
1. Kofta
2. Stuffing
3. The Gravy

Recipes :

Kofta 1:
Paneer kofta
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 2-3

Ingredients:
300g Paneer
2 boiled potatoes
¼ cup flour
Salt to taste
½ tsp red chili powder
Stuffing:
500g Spinach
2 tbsp grated cheese
1 tbsp fried garlic


Kofta 2:
Lauki kofta
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 2-3

Ingredients:
500g Lauki (doodhi)
¼ cup besan
½ tsp salt
½ tsp red chili powder
Stuffing:
6 dried apricots, soaked
3 tbsp khoya
1 tsp chopped green chilies
¼ tsp salt

Gravy 1:
Red Gravy
Preparation Time: 20 minutes
Cooking Time: 20minutes
Serves: 2-3

Ingredients:
1 kg tomatoes, chopped
1 onion chopped
1” ginger
7-8 cloves garlic
1 bay leaf
1 cinnamon stick
3-4 green cardamoms
1 tbsp Kashmiri red chili powder
8-10 cashew nuts
Salt to taste

Boil all ingredients together with 2 cups water till well cooked. Remove the bay leaf, cinnamon stick, Cool and grind to a smooth paste.

Gravy 2:
White Gravy
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 2-3

Ingredients:
5 onions, chopped
1” ginger
7-8 cloves garlic
1 bay leaf
1 cinnamon stick
6-7 green cardamoms
½ mace flower
8-10 cashew nuts
Salt to taste
Method:
Boil all ingredients together with 2 cups water till well cooked. Remove the bay leaf, cinnamon stick, Cool and grind to a smooth paste.
