Ep.2 [K-FOOD] Banquet Noodle Soup (Janchi Guksu)

Chef Ryan shares with us how to make janchi guksu, or banquet noodle soup. In Korea, long thin noodles are traditionally associated with longevity and are served at weddings to wish the couple a long and healthy life together. The springy noodles are garnished with Korean zucchini, egg, kimchi, and seasoned laver, and topped with a special sauce to make this popular dish. Discover how to make a light broth using dried anchovies, dried kelp, and Korean radish – an essential base for many Korean recipes.

[Ingredients]
200g Somyeon
200g Korean radish
1 Korean leek
5 Dried shiitake mushrooms
7 Garlic cloves
1/2 Onion
5 Dried anchovies
20g Dried kelp
3T Kimchi
1 Egg
3 Seasoned laver sheets
1/2 Korean zucchini

[Sauce]
2T Soy sauce
1t Korean red chili flakes
1t Sesame oil
1t sesame seeds
1 Clove minced garlic
1 Scallion

[Directions]
1. Combine 5 dried anchovies, with heads and guts removed, 20g of dried kelp, 1/2 of onion, 5 dried shiitake mushrooms, 7 cloves of garlic, 200g of Korean radish, slices and roots of 1 Korean leek, and 1L of water in a pot. Cover, bring to a boil and reduce to low heat for 20 min.
2. Cut 1/2 of Korean zucchini into matchsticks. In an oiled pan, stir-fry for 1 min over medium-high heat. Set aside to cool off.
3. In the same pan, add 1 beaten egg and swirl the pan to spread into a thin layer over low heat. Roll up the egg and slice thinly on a cutting board. Set aside.
4. Chop 3T of kimchi. Prepare 3 small sheets of seasoned laver, cut into strips.
5. In a small bowl, add 1 clove of minced garlic, 2T of soy sauce, 1t of sesame oil, 1t of Korean red chili flakes, 1 chopped scallion, and 1t of sesame seeds. Mix well to make the sauce.
6. Add 200g of somyeon to boiling water and cook 3 min over high heat. When bubbles rise, add cold water.
7. Strain and rinse the noodles in cold water. Set aside to drain.
8. In a serving bowl, add 1/2 of somyeon. Top with 2T of Korean zucchini, 2T of egg, 1 1/2T of kimchi, and half of the laver strips. Ladle 2 cups of broth. Add 1T of sauce on top.
