An Orkney Broonie is a delicious and hearty oatmeal Gingerbread Loaf. This spice quick bread recipe is perfect for breakfast or for teatime.

The base recipe comes from 'The Scots Kitchen' by F. Marian McNeill, published in 1929. Filled with oats and not too sweet, this Orkney Broonie Recipe is traditional Scottish baking. A slight alteration has been made.

Ingredients:

170 grams old fashioned oats
170 grams all-purpose flour
85 grams brown sugar
57 grams unsalted butter
1 1/2 tsp ground ginger
3/4 tsp baking soda
1/2 tsp salt
2 tbsp treacle or molasses
1 large egg, at room temperature
3/4 to 1 cup buttermilk
