The warmer weather is finally approaching in Paris! This video is a vlog of the new this and that that we have started to do to welcome spring. The first thing I did was something indispensable (?) for Japanese people living in Paris: sowing seeds of Japanese herbs such as Shiso and Mitsuba. This year, I also planted new herb seeds and tomato seedlings. We are looking forward to the day when they sprout.
We are so busy these days that we tend to eat out more and more, and when that happens, fruits and other ingredients tend to get overripe or bad. But even fruits that are too ripe to taste good raw are often fine when cooked. If you make a simple fruit compote, not a jam, by mixing apples, pears and various other fruits available at the time, you can enjoy it with yoghurt or as a topping for ice cream.
And one thing I'm really into at the moment is composting, which you can do on your balcony. It reduces the amount of waste and makes daily life more comfortable. And of course, it's great for the environment too!
We also filmed how to make sauerkraut and how to use old sauerkraut to make dinner.
I feel that by reducing waste, clearing out the old and bringing in the new, we can create a pleasant lifestyle.

How to make sauerkraut

Ingredients
1 cabbage
Salt

How to make
Boil the storage jars.
Strip the cabbage of its outer leaves.
Cut the tough stems and shred all the rest.
Add salt equivalent to 2% by weight of the cabbage and mix well.
Place the cabbage in the preserving jar with the juice and press it into the jar with a rolling pin.
Press the outer leaves, which were removed earlier, into the jar in place of the lid.
Leave at warm room temperature for up to a week and it is ready to serve.

Sauerkraut Chicken recipe

1 pack of mushrooms
One whole chicken
Salt to taste
1 jar of sauerkraut
100 ml white wine

How to make
Cut the mushrooms in half.
Season the chicken with salt.
Put the chicken, mushrooms, sauerkraut and white wine in a pan with no water, cover and cook over a low heat for 1 hour.
