Sweet & Sour Chicken Balls are a staple of UK Chinese restaurants and takeaways. And whether this dish is 'authentic' or not, when made well, it's damn tasty!
Here's what you need to make it yourself:
2 large chicken breasts
Velveting
1/2 tsp bicarbonate of soda/baking soda
Marinade
1 tsp cornflour/corn starch
1 tbsp light soy sauce
1/2 tbsp sesame oil
1 tsp sugar
Sweet & Sour Sauce
200 ml water
5 tbsp ketchup
5 tbsp malt vinegar
2 tbsp of honey or sugar
1 tsp dark soy sauce
1/2 bell pepper
1/2 an onion
1 small piece of fresh ginger
Batter
100g plain flow
1 tsp salt
1/2 tsp white pepper
200g self-raising flour
1.5 tsp baking powder
Some lukewarm warm water
1.5 l of cooking oil for deep frying
Thickening for sweet & sour sauce
2 tbsp cornflour/carnstarch
3-4 tbsp cold water
Steamed or fried rice or chips/fries for accompaniment
