Coral Fish (珊瑚鱼) is a common Chinese New Year dish. It has a sour, moderately sweet and sour aroma, crunchy and pleasant.
In Chinese there is an expression "年年有余" (prosperity in the new year), where the letter "余" (yu) has the same pronunciation as "鱼" (fish), so it is very common to have a plate of fish in celebration as it signifies prosperity.
As it is Chinese New Year, I wanted to make a high level dish to celebrate it, it is probably one of the most difficult dishes we have made, would you like to take the challenge with me and try it ?

Ingredients (for 2 people):

For the fish:
2 medium size fish fillets
A few slices of ginger
A few slices of garlic
1/2 glass of Chinese cooking liquor (or white wine)
1 teaspoon salt
10 tablespoons cornstarch
Vegetable oil
1 sharp knife

For the sauce:
4 tablespoons tomato sauce
3 tablespoons vinegar
4 tablespoons of sugar
1 tablespoon of cornstarch dissolved in water
1 teaspoon salt
