Yuca is an amazing side dish for any cuban meal...or really any meal! Abuela takes us step by step through the process. Directions below:

Directions:
1. Peel the yuca root and chop it into chunks. If you are using pre-packaged or frozen yuca this is unnecessary.

2. Put the yuca into your pressure cooker and fill it with enough water to cover the yuca. Add salt.

3. Cook for 20 minutes in the pressure cooker. If using a regular pot, bring the water to a boil, add the yuca and pinch with a fork occasionally until I is very soft.

4. Remove the yuca from water. Remove the "stems" or "root s" from the center of the yuca.

5. Drizzle with mojo and enjoy!
