Hey y'all!

Today I am making a super simple, super delicious, sweet, summery Pina Colada Cake!

Ingredients:
Yellow Cake Mix (Bake according to directions. If you want to make this cake EXTRA fun, you can substitute the water in the cake mix for rum! Malibu is my preferred rum for this!)
1 can of sweetened condensed milk
1 can sweetened condensed coconut milk OR cream of coconut
1 can of crushed pineapple
-1 container of whipped topping
1 bag of unsweetened shredded coconut

Bake the yellow cake according to the directions on the box. If you want this cake to have an extra kick, substitute the water for rum!

While the cake is baking, mix the cans of sweetened condensed milk and coconut milk/cream of coconut.

To this mixture, add only the juice from the can of crushed pineapple. Set the rest of the pineapple aside. Mix the milks and pineapple juice together until smooth.

Once the cake is baked and cooled slightly, take a chopstick and poke holes in the top of the cake. This will allow all of that moisture to soak into the cake!

Top the cake with the milk and pineapple juice mixture, pouring slowly to allow for moisture to soak in.

Once the liquid mixture is on the cake, take the crushed pineapple and spread it on top of the cake. Be careful with spreading too harshly! If your cake is still fairly warm, spreading the pineapple could cause the cake top to break.

Finish off your cake by topping with the container of whipped topping and sprinkling with the shredded coconut.

Chill for at least 2 hours and enjoy!
