These Leftover Rice Recipes are quick and easy. These leftover rice recipes also make for a very interesting use of any leftovers.

Recipe :
Bread Cutlet

Ingredients:
2 cups Leftover rice
1 cup Boiled Potato, grated
Bread crumbs
1 cup Flour
1 tbsp Chopped chilies
¼ cup Chopped onions
¼ cup Corn
¼ cup Capsicum
Salt to taste
½ tsp pepper
1 tsp chili flakes
1 tbsp Pizza Seasoning

Method:
Mix together the leftover rice, potatoes with all the vegetables and 2 tbsp flour. Season to taste. Make a free-flowing slurry with the remaining flour, sufficient water and season with salt & pepper. Shape cutlets out of the mixture. Dip in the slurry and roll in the breadcrumbs. Let rest for 10 minutes. Shallow fry in medium hot oil till golden. Serve.

Lemon Rice:

Ingredients:
2 cups Leftover rice
1 tsp Chana dal
1 tsp Urad dal
Few Curry leaves
¼ cup Peanuts
¼ cup cashew nuts
1 tsp Turmeric powder
2-3 Whole red chilies
¼ cup Lemon juice
2 tbsp oil

Method:
Heat oil in a pan. add the mustard seeds and the chana dal & urad dal. Sauté till the dals are golden. Add the curry leaves, broken chilies and sauté for a few seconds. Add the rice, salt and roasted peanuts and mix well. Add the lemon juice and mix well. Remove from fire and serve.

Instant Idli

Ingredients:
Cup Cooked Rice
1 Cup Semolina
½ Cup Yogurt
½ tsp Salt
2 tsp Eno Salt
Water to adjust the consistency

Method:
In a blender/mixer add cooked rice with about ¾ Cup water, semolina, yogurt, salt and blend to a smooth paste.
Cover and keep the batter aside for 10 mins.
Meanwhile, grease Idli tray molds lightly with oil.
Fill steamer ¼ level. When water starts boiling
After 10 mins., add 2 tsp of ENO fruit salt to the batter.
Mix lightly. Do not over-beat the batter. Pour batter in idli molds.
Immediately place in the steamer, cover and steam idli for about 10-12 mins.
Once done, check Idlis, insert a tooth pick, it should come out clean.
Take out cooked Idli from the molds. Serve with Chutney and Sambhar.
