Getting ready for Ramadan is my favourite part of the year.
Like every time, this year too I have come up with some tips and tricks you could follow to ease your work in the kitchen.
Yes, it Ramadan, we need to focus on our spiritual part. But when we have a family to feed, we can’t step out of the kitchen completely. So hope these tips would be helpful.
Do share me your tips and tricks that you follow.
To my non-Muslim viewers, these tips would definitely help you too as I categorise them as a video in my time-saving recipes. So it’s helpful even otherwise.

ALOO PARATHA : (00:34)
Potato - 4 large
Wheat flour - 6 cup
Salt - 1-2- tbsp
Oil - 1/2 cup
Warm water - as per needed
Ginger chopped - 3 - 4tbsp
Green chillies - 5 - 6
Coriander leaves - a handful
Dried fenugreek/methi leaves - 2 tbsp
Salt
Optional:
Spices - chaat masala, turmeric powder, anchor powder, dried red chilly flakes, garam masala powder

MAGIC MASALA/CURRY POWDER : (4:53)
Garam masala :
Cardamom pods - 1/8th cup
Cloves - 1/8th cup
Cinnamon stick - 2 big
Fennel seeds - 1 tbsp
Cumin seeds - 1 tbsp
Whole black pepper - 1 tbsp
Star anise - 2
Mace - a few
Nutmeg - 2 tiny pieces

Masala powder -
Red chilly powder - 4 tbsp
Kashmiri red chilly powder - 2 tbsp
Turmeric powder - 2 tbsp
Coriander powder - 4 tbsp
Garam masala powder - 2 tbsp
Black pepper powder - 1 tbsp

GINGER/GARLIC/GREEN CHILLY PASTE : (7:11)
Ginger paste :
Ginger - 400 - 500 gm
Salt - 1-2 tbsp
Veg oil - 4 - 5 tbsp

Garlic paste :
Garlic - 400-500 gm
Salt - 2 tbsp
Veg Oil - 5 tbsp

Green chilly paste :
Green chillies - 150-200gm
Salt - 1 tbsp
Veg oil - 3 - 4 tbsp

2 IN 1 MASALA: ( 9:49 )
Onion - 5 large-medium size + 3 for frying
Curry leaves - a handful
Tomato - 5 large
Garlic - 2 whole
Ginger - 2 medium size
Green chillies - 20 ( more or less as per your spiciness )
Oil - for frying and sautéing
Ghee - 1 heaped tbsp
Garam masala powder - 1 heaped tbsp
Coriander powder - 2 heaped spoons
Turmeric powder - 1.5 - 2 tbsp
Lemon juice - of 1 big lemon
Optional : coriander leaves, mint leaves, salt

LEMONADE SQUASH : ( 15:58 )
Lemon - 6 large
Sugar - 1.5 cup
Salt - 1 tbsp
Mint leaves - almost 2 handful
Ginger - a small piece
Water - 1 -1.5 cup

GRAPES SQUASH : ( 17:11 )
Black/purple grapes - 500 gas
Sugar - 1 cup
Cardamom pods - 6 - 7 optional

DATES PASTE : ( 18:11 )
Dates - 2 cups
Hot water - 3 cups

LEMON DATES PICKLE :
Lemon or lemon peel - of 6 big lemons
Dates - 15
Sesame oil - 1/2 - 3/4 cup
Ginger - 2 tbsp chopped
Garlic - 2 whole
Green chillies - 10 - 15
Vinegar- 1/2 cup
Red chilly paste - 4 - 5 heaped tsps mixed with little vinegar to make a paste
How water - around 1 cup
Salt
Sugar ( optional ) - 1.5 tsp
