Panettone, panetone, fruit bread ... call it what you want, but this recipe for homemade panettone is a spectacle that is done in less than 24 hours and then it lasts up to 1 week without problem.

INGREDIENTS:

Preferment:
60 gr flour (1/2 cup)
60 ml milk (1/4 cup)
2 gr dry yeast (1 tsp)

For the 1 dough:
Preferment
2 eggs M
2 egg yolks
275 gr strong flour (2 cups + 2 tablespoons)
45 gr sugar (3 tablespoons)
75 gr unsalted butter (1/3 cup)
Essence of panettone

For the second dough:
Previous dough (dough 1)
135 gr strong flour (1 cup + 1 tsp)
2 eggs M
1 egg yolk
75 gr sugar (1/3 cup)
75 gr unsalted butter (1/3 cup)
160 g candied orange and raisins (3/4 cup)
Glazed chestnuts (Marron glacé)
Panettone essence:
30 gr Honey (1 tablespoon)
1 tablespoon Rum
1 tsp Vanilla extract
1 orange zest
Zest 1 lemon

Panettone topping:
150 gr powdered sugar (1 + 1/4 cups)
50 gr ground almonds (1/4 cup)
2 egg whites
25 gr cornstarch (2 tablespoons)
10 ml vegetable oil (2 tsp)
