📋 INGREDIENTS:
Dough:
150 g butter (⅔ cup)
150 g icing sugar (1 ¼ cups)
4 eggs
100 g hazelnuts (1 cup), ground
90 g all-purpose flour (¾ cup)
2 tbsp cocoa powder
2 teaspoons of baking soda

Cream:
400 ml milk (1 ⅔ cups)
37 g cocoa pudding powder or cornstarch (⅓ cup)
2 egg yolks
4 tablespoons sugar
250 g butter (1 cup + 2 tablespoons)

Nut filling:
250 g hazelnuts (2 ½ cups), chopped
100 g powdered sugar (⅞ cup)
8 g vanilla sugar (2 tsp)
150ml rum (⅔ cup), or 150ml milk (⅔ cup) and 2ml rum flavoring (½ tsp)

Chocolate icing:
200 g chocolate (1 ¼ cups)
100 g butter (⅔ cup)

For the fruit layer:
Fruit jam (currant, apricot, ...)

For decoration:
Hazelnuts, whole

Bake:
Temperature: 160°C (320°F) convection
Baking pan: diameter 33 cm x 29 cm (13 x 11.5 inches)
