Let the Fall recipes BEGIN!!🍂 I wanted to start of my fall recipes with one that I make often and is just so easy and sooo delicious! It's my Autumn chickpea salad! I infuse sweet dried cranberries, crisp apples, crunchy celery, nutty pecans and fall herbs in a sweet and tangy dressing into a classic chickpea salad to make the BEST Autumn chickpea salad! Let's just say prepare for an explosion mouthful flavors! ENJOY!


Ingredients *makes 4-6 servings
・dressing
3/4 C vegan mayo
1 1/2 Tbsp dijon mustard
1 1/2 tsp agave nectar
2 tsp apple cider vinegar
・salad
2 cans of rinsed and drained chickpeas (mashed)
OR
30 oz vegan chick'un strips (diced)
1 celery rib (diced)
1/2 C honeycrisp apples (diced)
1/3 C dried cranberries
1/2 C pecan pieces
2 Tbsp flat leaf parsley (chopped)
1 Tbsp tarragon (chopped)
S+P to taste
*serve on vegan brioche, in wrap, lettuce cups or simple with crackers!
