I converted my Vespa using Retrospective Scooters' EV Conversion Kit:

Prior to this project, I had never turned a wrench on a Vespa and never attempted this type of EV conversion. I have no mechanical or electrical training; I am just another shade tree mechanic fitting these types of projects into my weekends. This conversion was done over the course of 3-4 weeks. In total it probably took about 16 hours.

Since completing this, Retrospective Scooters has started selling a revised conversion kit that uses the chassis ground (unlike mine) and allows you to plug into the existing wiring harness. This was not possible with my kit, so I removed 99% of the old wiring. There was therefore a bit more effort involved in connecting the gauge cluster lights and indicators, but overall, it wasn't too bad.

If anyone is interested in doing this conversion, I highly recommend purchasing Retrospective Scooters' kit. I have zero regrets.
