Living in Mashiko, Tochigi Prefecture, on a still cold day with snow remaining.
I visited the house of former cafe owner Yoshie Shinoda again.

She taught me a recipe that will warm you from the core during the cold winter months.
Rich and creamy gratin, bean-flavored hummus, and refreshing apple dessert.

It warmed her heart and made her realize something important.

▽Seafood cream gratin (miso flavor)▽

Ingredients (3-4 servings)
Frozen seafood 150g
1 potato
1 onion
Mushrooms (if available)
Butter 30g
2 tablespoons flour
2 cups milk
About 2 teaspoons of miso (homemade) *Adequate amount depending on taste
A pinch of salt
A little alcohol
pizza cheese

Preparation
You can use frozen seafood, so sprinkle it with potato starch and mix it well.
After that, add a little water and mix well with the thick potato starch solution.
Then wash thoroughly with running water. (To remove fishy odor and dirt from fish and shellfish)

Potato, cut into 2cm cubes
Onion, cut into 1cm cubes
Preheat the oven to 200℃

How to make
① Melt the butter in a frying pan, add onions, potatoes, and seafood in that order and stir-fry well each time.
② Add a jar of sake and mix gently to evaporate the alcohol.
③ Sprinkle in the flour and stir-fry with the ingredients (be careful not to burn!)
④Once the flour is mixed with the ingredients, add the cold milk all at once and stir well.
⑤ When it comes to a boil, lower the heat and season with a pinch of salt and miso.
⑥ Cover the pot and simmer over medium heat for 2 to 3 minutes until the potatoes are soft.
⑦ Remove the lid, increase the heat, and simmer while stirring until it thickens.
⑧ Mix an appropriate amount of pizza cheese into the finished stew,
Transfer to a bowl and top with more cheese.
⑨ Bake in the oven at 200℃ for 10 to 12 minutes.
Once it looks delicious, enjoy it♪

▽Chickpea hummus▽

200g chickpeas (boiled)
2 tablespoons olive oil
2 tablespoons lemon juice (half a lemon)
1 clove garlic
1/2 teaspoon salt
Grain mustard 1 tablespoon

Mash the chickpeas, mix the ingredients, and it's done!

▽Easy apple dessert▽

apple
Dried yogurt (unsweetened)
cane sugar
Maple syrup (or honey if you like)
walnut

Cut the apple and put it in a bowl
For drained yogurt strained with a tea strainer etc.
Add a little sweetness with cane sugar and pour it over the apples.
Top with walnuts and drizzle maple syrup on top.
If you add tarari, it becomes even richer.
