Another perfect autumn dessert with poached apples :) I love cozying up in the autumn evenings with a book and a delicious dessert. This sugarfree apple dessert is really simple and easy to make yet it's so tasty :)

For this Sugarfree Apple Dessert you will need:
6 medium apples
50g (1/2 cup) almond flour
50g (1/3 cup) hazelnuts
50g (3 tbsp + 2 tsp) butter
50g (2oz) dark chocolate
Almond milk
Allspice berries
Cinnamon stick
Clove (whole)
Star anise
Sweetener of choice, you can even skip the sweetener if you want

Start by peeling the apples and taking out the cores. When I core them I make the holes a bit bigger so that I can fit in more filling. Transfer the apples into a cooking pot and add spices. Make sure not to use any powder spices, they are there to add a bit of flavor to the apples and the water that the apples will cook in, you are supposed to take them out later. The next step is toasting the hazelnuts just to bring out a bit more flavor, then set them aside to cool down.
Add water to the pot, add enough so that apples float. Cook apples on medium heat, until soft. Flip the apples occasionally so that they will cook equally on all sides.
Melt butter and chocolate in another pan, that will be the base for the filling.
Apple cook time will be different for different types of apples. Go for a sweeter and softer type of apple, they will be softer and nicer texture after cooking.
Check if apples are cooked with a fork, the fork should easily pass through. Take the apples out of the pot and leave them to cool.
Save the water in which apples are cooked, it will be kind of a sauce.
Chop the hazelnuts and add them to the melted butter and chocolate mix.
Add almond flour and sweeter of choice (optional). Combine the ingredients. Add a bit of almond milk (or any other you have) so that the filling is not too hard. It should be a bit runny - it will harden once in the fridge.
The next step is to strain the water to remove the spices. Add sweetener or sugar to the water.
Now it's time to fill the apples :) Be generous with filling :)
Once all the apples are filled pour the water into the dish in which you will store them. This will keep the apples from going dry and it's kind of a sauce. It will keep them soft and tasty :)
Leave in the fridge to cool.
Serve with a bit of sauce :)
