炸红萝卜丝 俗称: 素螃蟹
Deep-fry Shredded Radish is a commonly known as Vegetarian Crab

秘诀:
*六七成油温下入红萝卜丝,炸的过程中控制好油温很重要
*最好用红薯淀粉
Tips:

食材 / Ingredients:
红萝卜 200克 / 200g Radish, Shredded
海米 20克 / 20g Dried Shrimps, Finely Chopped
大葱10克 / Leeks, Finely chopped

调味料 / Seasonings:

盐 少许 / A pinch of salt
花椒粉 1/2 茶匙 / 1/2 tsp of Chinese Prickly ash Powder
十三香 1茶匙 / 1 tsp of Thirteen Spices Powder
红薯淀粉 2汤匙 / 2 tbsp of Sweet Potato Starch
面粉 1 汤匙 / 1 tbsp Plain Flour
水 少许 / a little tap water

操作:
1. 红萝卜切丝
2. 海米切碎,放入红萝卜里
3. 切少许葱末
4. 加盐、花椒粉、十三香、葱末放红萝卜丝里
5. 然后放入红薯淀粉和少许面粉 和适量水 搅拌均匀
6,热锅烧油,油温六七成热下入拌好的红萝卜丝,炸至金黄色捞出 装盘即可

Methods:
1. Cut radish into shredded
2. Dried shrimps chopped and put into radish bowl
3. Leek chopped
4. Add salt, Chinese Prickly ash Powder, Thirteen Spices Powder, Chopped leek into radish bowl
5. and then add sweet potato starch and plain flour, a little tap water and mix them well
6. Pre-heat hot pan, Put Mixed radish into the hot oil around 170 degree. Deep-fry until golden brown and take it out to the plate.

蘸汁制作/ Dipping Sauce :

醋 1汤匙 / 1 tbsp Vinegar
生抽 1汤匙 / 1tbsp of Light Soy Sauce
盐 少许 / a pinch of salt
糖 3克 / 3g of Sugar
蚝油 5克 / 5g of Oyster sauce
五香粉 少许 / 3g of Five Spices (Optional)
蒜末 3瓣 / 3 cloves of Garlic, chopped
葱花 10克 / 10g of Leek, Chopped
辣椒面 5克 / 5g of Chili Peppers
芝麻 少许 / a little Sesame
香油 少许 / a little Sesame oil
少许白开水 / a little Boiled water or tap water

1. 先将葱花,蒜末,辣椒面,五香粉 放入一个小碗里
First, put chopped leek, chili peppers, chopped garlic into the bowl
2. 烧少许热油,然后浇到小碗里的食材上
Heat oil and pour into the bowl
3. 接着在小碗里放入生抽,醋,蚝油,糖,盐,芝麻和少许香油,即可享用
Afterwards, add rest of seasonings into the bowl and mix well.
