Every year I make this fish recipe for Christmas!
You can vary the recipe and use other fish such as hake, haddock or even turbot.
How do you know if a fish is cooked to perfection?
The first sign that a fish is ready to eat is when the meat separates from the bone easily. Any sliced white fish cooks in less than 10 minutes, never wait longer than that.

The seafood casserole is a typical stew from the Spanish coast, with slight variations depending on the area. In my area, the Atlantic coast, this is the most common way to prepare seafood fish, in the Mediterranean it is common to add chopped almonds to thicken the sauce and it is known as "Zarzuela de Pescado".
