Ingredients for the dough:
300 gr of Corn Flour (2 Cups).
30 gr of Wheat Flour (1/4 Cup).
1/4 to 1/2 tsp of Salt. (I used 1/2 tsp).
450 ml of Hot Water (2 1/2 Cups, same cup that the flour was measured with).
(I use dry measuring cups for the dough).
Filling:
500 gr of minced beef (pulp or sirloin).
Salt and pepper to taste.
1 tsp of mustard (optional).
1 tsp of ground paprika (optional).
40 to 60 ml of broth or water (1/4 cup).
1/2 to 3/4 chopped onion.
1 to 2 chopped jalapeño or serrano peppers.
2 small diced potatoes (195 to 220 gr).
Sauce:
3 guajes/roma tomatoes.
1/4 to 1/2 onion.
4 garlic cloves.
4 guajillo peppers.
4 peppers, 1 pinch of cumin, 1/4 tsp of oregano, 1/4 tsp of thyme.
3 to 4 chiles de arbol (optional).
40 to 60 ml of Broth or Water (1/4 Cup)
100 ml of Beer (1/2 Cup)
Salt to taste.
