✿ BRIOCHE BREAD - Do you know?
At first, the chrysanthemum bread but the flavor comes from butter (up to 65% of the total flour), eggs, vanilla /fleur d'oranger extract.

This is one of the most famous French bread, with the highlight of the very soft, light and spongy texture.
✿ Ingredients:
320 gr Bread flour
5 g (1.5 tsp) Instant dry yeast
90 gr sugar
2 gr salt
80 gr whipping cream / milk / whole milk
2 medium eggs (110 - 120 g with shell)
150 gr of unsalted butter
2ml fleur d'oranger extract or ml vanilla extract
Sliced almonds, sesame seeds, ... (optional)

✿ CAUTION WHEN MAKING BRIOCHE FLOWER CAKE
NOTE 1: Use a scale to measure ingredients most accurately.
NOTE 2: Butter is an important ingredient in the delicious flavor of the cake, so choosing a good butter will make it taste better. Don't use margarine.
NOTE 3: Whipping cream can be replaced with whole milk or milk. However, the taste and texture of the bread will not be as good as using whipped cream.
NOTE 4: I use cold eggs, cold cream and chopped very cold butter.
NOTE 5: The battering time will vary depending on the quantity of ingredients and the capacity of the egg beater.
NOTE 6: When shaping, you should use flour, to help separate the bread fibers, when the cake blooms easier.
