1 bag of red shiso
(about 200g of leaves alone)
700ml water
300ml mirin
150ml apple vinegar
100g honey
(add 200g if you want it to be very sweet)

[Red shiso grounds sprinkles]
Red shiso grounds
50g fresh ginger
1 tablespoon soy sauce
2 tablespoons mirin
2 tablespoons sake
2 tablespoons roasted sesame seeds
