My delicious Pikelets Recipe. For the full list of ingredients and instructions, see below...
Make about 20
175g strong white bread flour
175g Plain flour
2 x 7g sachets of instant yeast
350ml milk
1 tsp caster sugar
½ tsp bicarbonate of soda
150-200ml warm water
A little sunflower oil for frying
Mix the flours in a bowl, add the yeast and sugar. Heat the milk to lukewarm and pour onto the flour. Mix well. Beat with a wooden spoon to make a thick batter.
Cover and leave to prove for around an hour until it has risen.
Mix the bicarbonate of soda with the warm water and add to the batter. Stir until smooth and you have a pouring consistency. Cover and leave for 20 minutes until bubbles appear on the surface.
Heat a large frying pan over a medium heat. Add a little oil to the pan and wipe with kitchen roll.
Cook the pikelets in batches. Drop 2 tbsp of batter into the pan. Cook for 2-3 minutes until bubbles appear on the surface and they have burst. Turn over and cook for 2 minutes more.
Serve straight away with plenty of butter or leave to cool and then toast.
