FILLING:
-2 teaspoons oil
-1/2 cup chopped button mushrooms
-salt
-1/2 teaspoon garlic powder
-1/2 teaspoon cumin powder
-1/2 teaspoon chipotle or paprika
-1/4 teaspoon dried oregano
-1 tablespoon butter
-1/2 small onion
-1 small tomato
-1 green chilli
-2 medium potatoes
-1 tablespoon cream
-Juice of 1 small lemon
-chopped fresh coriander leaves

SALSA ROJA:
-2-3 small tomatoes
-1/4 of a small onion
-1 whole chipotle or kashmiri mirch
-1 clove garlic
-salt
-1/8 teaspoon cumin powder
-pinch dried oregano
-splash of water
-juice of 1 small lemon
-1-2 teaspoons oil

PICO DE GALLO:
-1 medium tomato
-2 tablespoons chopped red or green onion
-1 green chilli
-chopped fresh coriander leaves

TORTILLAS:
-3-4 (6” each)

TO SERVE:
-a few tablespoons sour cream / crema
-fresh coriander leaves to garnish
