🎯 Mughlai Chicken Akbari Ingredients:-

For Chicken Marination:-
Chicken 1 kg
Lemon 1
Salt 1 tsp
Coriander powder 2 tbsp
Red chilli powder 1 tsp
Turmeric powder 1/4 tsp
Garam masala powder 1/2 tsp
Curd 1/2 cup or 4-5 tbsp
Ginger garlic paste 3 tbsp

Beaten malai 4-5 tbsp
Orange food colour 2 pinch
Onions paste 3 medium sized
Bay leaves 2
Cloves 4-6
Cinnamon stick 1
Cumin seeds 1/2 tsp
Black pepper 15
Green cardamom 4
Green chillies 3-4
Kewra essence 1 tsp
Cashew nuts 10-15
Coriander leaves
Water 1-1.5 cups
Cooking oil 150 ml

For Dry Fruits Paste:-
Almonds 12
Cashew nuts (Halved) 15-20
Poppy seeds 1 tbsp
Saffron 2 pinch
Green cardamom 10-12
Mace flower 1/2
Nutmeg 2 pinch

🎯 Mutton masala Ingredients:-
Meat -600 gm
Mustard oil 100 se 150 ml
Onions -3 medium sized
Salt -1 tsp
turmeric powder -1/4 tsp
Ginger garlic paste -2 tbsp
Green chillies -8-9
Some Coriander leaves
Black cardamom -1
Green cardamom -4
Cloves -4
Cinnamon sticks -1
Black pepper -1 tbsp
Cumin seeds -1 tbsp
Coconut nut slices -50 gm
Coriander leaves -some
Water as required

🎯Wahid Briyani Ingredients:-

For Rice:-
Long grain raw basmati rice 5 cups/1 kg
Water 3-3.5 litres
Cloves 10
Green cardamom 10
Salt 4 tbsp

For Chicken Gravy:-
Chicken 1.25 kgs
Onion 1 big sized+1 medium sized
Ginger garlic paste 3-4 tbsp
Green cardamom 8-10
Cloves 8-10
Yellow chilli powder 2 tbsp
Red chilli powder 1 tbsp
Mace flower 3
Green cardamom 20
Nutmeg small piece
Cinnamon stick 2 small
Cloves 4
Curd 1/2 cup
Salt 1 tbsp
Milk 1 cup
Yellow food colour 2-3 pinch
Meetha ittar 2-3 drops
Kewra water 1 tsp
Rose water 1 tbsp
Cooking oil 200 ml

Diluted solution:-
Orange food colour
Briyani essence 1 tbsp
Water 1 tbsp

🎯Santari Zarda Ingredients:-

For Boiling Rice:-
Long grain sela basmati rice 4 cups/750 gms
Water 3-3.5 litres
Yellow food colour 1/2 tsp
Salt 1 tsp

For Layering :-
Cloves 4-5
Green cardamom 4-5
Clarified butter 4-5 tsp
Orange 1
Sugar 4 cups
Milk 1/4 cup (if required)

For frying dry fruits:-
Cashew nuts 1/4 cup
Almonds 1/4 cup
Raisins 1/4 cup
Black raisins 1/4 cup
Cloves 4
Green cardamom 4
Clarified butter 50 ml

For roasting Khoya:-
Clarified butter 4-5 tbsp
khoya/Mawa-600 gm
