A little catch up on things, plus a little bit of cooking. Sadly, I tried to use two cameras but the phone I used was so old, I couldn't download the footage! Doh! I tried for so long, to no avail. I wondered whether to post this video at all, but wanted to let you know how I got on at the Drs.

Boiled Fruit Cake Recipe:

125g baking fat
175g light brown soft sugar
225ml water
200g raisins
200g sultanas
100g currants
50g mixed peel
225g self-raising flour
1½ tsp mixed spice
½ tsp baking powder
2 eggs, beaten

PS: I used only sultanas and mixed peel, because that's all I had...

Line a 900g loaf tin with baking parchment. Melt the sugar, butter and 225ml water in a large saucepan. Once melted, add the raisins, sultanas, currants and mixed peel. Bring to a gentle boil, and stirring occasionally, cook until reduced and softened, around 10-15 mins. Remove from the heat and leave to cool to room temperature.

STEP 2
Tip the flour, mixed spice, baking powder and a pinch of salt into a large bowl. Add the cooled fruit mixture and stir, then add the eggs and mix to combine. Bake for 45-55 mins until dark brown and a skewer inserted into the middle comes out clean. Leave to cool in the tin for 10 mins, then transfer to a wire rack to cool completely. Cut into slices to serve.

I cooked mine in the Air Fryer for 45 minutes on 180, but could just as easily bake in a regular oven.

Honey Chicken:
¼ cup honey
2 tablespoons soy sauce
⅛ teaspoon red pepper flakes (optional)
1 ½ tablespoons olive oil
2 skinless, boneless chicken breast halves, cut into bite-size pieces

Add oil to pan, fry off chicken until lightly browned, combine soy sauce and honey and add to pan, simmer until chicken is cooked and sauce has reduced slightly. Don't overcook, which is easily done with chicken breast. I served ours with plain boiled rice and some courgette and mushrooms fried together.
