1 Tbsp Olive oil
1 Cup of finely chopped onions
3 Cloves of grated garlic
½ Tbsp Grated ginger
1 Cup of chopped tomatoes
1 Tbsp Cumin powder
1 Tbsp Coriander powder
1 Tbsp Fennel seeds powder (Optional)
½ Tbsp Turmeric powder
½ Tbsp Cinnamon powder
½ Tbsp Red chili powder
½ Tbsp Salt
1 Big cup of washed Brown lentils. You can use puy or green lentils
1 Medium size sweet potato cut in medium size pieces
1 & ½ Cup of vegetable broth
1 Cup of coconut milk
One big cup of chopped Spinach
