Christmas Candle Cake is a beautiful and delicious cake with interesting fillings inside. Perfect for Christmas or other Winter Holidays.

Makes one high candle like mine or two low
INGREDIENTS
For Cake:
1 ½ cup (or 3 sticks) unsalted butter, softened
1 ½ cup granulated sugar
6 large eggs
1 tablespoon pure vanilla extract
1 tablespoon baking powder
3 cups all-purpose flour
Zest of one lemon
½ cup white chocolate chips

For Strawberry Filling:
2 cups strawberry jam
4 oz strawberries

For Cream Cheese Frosting:
½ cup (1 stick) unsalted butter, softened
13.5 oz cream cheese
1 cup powdered sugar
2 teaspoons pure vanilla extract

PREPARATION
1. Make the Cake. Preheat oven to 375°F/190°С. Line the bottom of a 12-inch (30x30cm) square cake pan with parchment paper, grease with butter and set aside.
2. In a large bowl, cream the butter and sugar for about 1-2 minutes or until light and fluffy.
3. Slowly beat one by one eggs.
4. Combine flour and baking powder in a bowl. Add the dry mixture to the dough.
5. Add the lemon zest and vanilla. Mix until just combined.
6. Bake for 20 to 25 minutes, or until a skewer inserted into the centre comes out clean. Let cool about 10 minutes, remove the cake to a rack to cool completely. Then refrigerate for about 2-4 hours.
7. Cut four 5-inch (12cm) circles, and then cut it in half.
8. Make the Cream Cheese Frosting. Beat together the butter and powdered sugar until smooth.
9. Add cream cheese and vanilla and mix until smooth.
10. Make the Strawberry Filling. Melt strawberry jam in the microwave and add fresh strawberries; mix well.
11. Spread cream cheese frosting between layers and over top and sides of cake. Put strawberry jam with fresh strawberries on the cream cheese of each layer, except the top.
12. Cover the entire cake with the remaining frosting. Melt white chocolate and using a spoon to create long drips as you work your way around the cake.
