Sabudana Khichdi is a recipe enjoyed especially during Navratri! Sabudana Khichdi is one of those Navratri recipes that everyone loves but is wary to try at home.
Many a time we face a problem while making Sabudana Khichdi- its turns sticky and soggy!
But, if you want to make the perfect Sabudana Khichdi and forgot to soak the sabudana, no worries, I have you covered!
You can still make a non-sticky Sabudana Khichdi that too in just 10 minutes.
This no soak Sabudana Khichdi calls for the use of a pressure cooker.
But when we make a Sabudana Khichdi in a pressure cooker, it turns gooey. But not with this trick!

Recipe :

10 min Sabudana khichdi
Preparation Time: 5 minutes
Cooking time: 5 minutes
Serves: 2-3

Ingredients:
1 ½ cups Sabudana
2 Potatoes, boiled
1 Tbsp Desi Ghee
½ tsp Sugar
½ tsp Sendha Namak
5 Tbsp Water
1 Cup Peanuts
2 Green Chillies, chopped
2 Tomatoes, chopped
Coriander Leaves
1.5 Inch Ginger, chopped
1 tsp Black Pepper
1 tsp Cumin Seeds
6 - 7 Curry Leaves
1 tbsp Lemon Juice
2 tbsp Desi Ghee

Method:
Wash the sabudana well and drain completely.
Add 5 tbsp water, ½ tsp salt, ½ tsp sugar and place in a closed steel container. Place the container in a pressure cooker. Pour water to a ½ “ level and put the lid.
Pressure cook over medium heat for 4 whistles. Allow to cool down.
Remove the box from the pressure cooker.
Remove the sabudana to a large bowl. Add cold wate rand rub the sabudana between your fingers till the starch is removed. Drain the excess water.
Roast the peanuts with just 1 tsp oil till they begin to crack. Remove to a plate.
Heat 2 tbsp desi ghee in a pan. Add the cumin seeds, as the seeds crackle, add the chopped ginger, curry leaves and green chilies. Sauté till they are fragrant.
Add the tomatoes, sendha namak and sauté till tomatoes are slightly softened. Add the peanuts, sabudana, pepper powder and mix well. Sauté for 2 -3 minutes and remove from heat. Cover and rest for a few minutes. Add the lemon juice, coriander leaves, mix well and serve.
