I think this is the last of the fall recipes for this season.
Cheese recommendations (if you stick to cheese, it tastes a lot closer to the taste of the restaurant. (We have more than we can use, so please put some in the freezer.)

Ingredients] (1 to 2 servings)
2~4 chestnuts (depending on size)
1~2 mushrooms
1/4 onion
1 clove garlic
1/2 cup rice
5 g bouillon
600cc water
10 g butter
1 tablespoon white wine
about 30g cheese powder
Olive oil
black pepper
Recipe
1) Chop chestnuts, mushrooms, onion and garlic.
Dissolve the solid bouillon in 600 cc of water and bring to a boil.
(3) Put olive oil in a frying pan, sauté garlic and onion until fragrant, then add chestnuts and mushrooms and sauté briefly.
Add the rice to the oil and pour in the white wine to release the alcohol. When the rice becomes slightly translucent, add all of the broth and simmer for about 20 minutes.
5) Finish by adding butter, cheese powder, EV olive oil, and black pepper.
