Dough:
Milk -450 ml
Eggs-2pcs
Sugar-1h.l
Salt-1h.l
Yeast-1.5 tsp
Flour-650g
Sunflower oil-3-4st.l (on top of the dough)
Filling:
Suluguni cheese-400g
Brynza-400g
Cheese Mozzarella-400g
(Since my cheese and suluguni are a little salty, I did not add salt to the filling)
For greasing khachapuri yolk + 1 tbsp milk.
+4 yolks or 4 eggs on top of khachapuri.
Add yeast, salt, sugar, egg to warm milk, mix, sift flour and knead soft dough. Add vegetable oil over the dough and knead the dough for a couple more minutes. Cover with cling film, a towel or a lid. I remove the dough into a warm oven to rise. I turn on the oven at 40-50 degrees, no more. After rising, I crush the dough and leave it in the oven so that the dough comes up a second time.
For the filling, I used mozzarella cheese, suluguni and cheese. I rub all the cheeses on a grater and mix.
Divide the dough into 4 equal pieces.
Roll out the dough and form khachapuri. Grease with yolk and milk.
Bake in a well-heated oven at t 190 * for 20 minutes. When khachapuri is browned, add the yolk or egg. Bake for another minute.
