मोमोज आवरण साठी |Momos Cover / Dough
• मैदा २ कप | Maida / All purpost flour 2 cups
• मीठ चवीनुसार | Salt to taste
• पाणी पीठ मळण्यासाठी | Water to knead dough
मोमोज सारण / स्टफिंग साठी | Momos stuffing
• किसलेला कोबी २ कप |Grated cabbage 2 cups
• किसलेले गाजर ३/४ कप | Grated carrot ¾ cup
• मीठ चवीनुसार | Salt to taste
• तेल ३ टीस्पून | Oil 3tsp
• एकदम बारीक चिरलेला लसूण १ टेबलस्पून | Very finely chopped garlic 1 tbsp
• बारीक चिरलेले आले १ टीस्पून | Very finely chopped ginger 1tsp
• बारीक चिरलेली ढोबळी १/४ कप | Finely chopped camsicum ¼ cup
• काळी मिरी पूड १/२ टीस्पून | Black pepper pw ½ tsp
• चिरलेली कांदा पात हिरवी १/४ कप | Chopped spring onions green ¼ cup
• बारीक चिरलेली कोथिंबिरीची कोवळी देठे १ टेबलस्पून |Chopped Fresh Coriander stems 1 tbsp
मोमोज चटणीसाठी | For momos chutney recipe
• पिकलेले टोमॅटो ४-५ मध्यम |Ripened tomatoes 4-5 med
• लाल सुक्या बेडगी मिरची ७-८ |kashmiri Dry red chilies 7-8
• तिखट मिरची ३-४ | Red chilies 3-4
• लसूण पाकळ्या १०-१२ | Garlic cloves 10-12
• आले १ इंच | Ginger 1 inch
• साखर १ टेबलस्पून | Sugar 1tbsp
• मीठ चवीनुसार | Salt to taste
• मिरीपूड १/४ टीस्पून | Black pepper pw ¼ tsp
How to make veg momos | How to make street style veg momos & chutney recipe |
To knead dough -
• Into a mixing bowl take all purpose flour, salt & knead a tight dough, apply some oil & cover, let it sit for sometime
To make momos stuffing -
• Into a mixing bowl take grated cabbage, grated carrots to this add salt (add salt more than regular taste) mix well & keep it aside for 10 mins
• After 10 mins, squeeze the vegetable to remove excess water from it.
• Now heat up oil into a kadhai, add chopped garlic, ginger & saute them on high flame
• to this add grated & squeezed vegetables, chopped capsicum & soy sauce & saute them for 2-3 mins on high flame
• Then add chopped fresh coriander stems, black pepper pw & chopped spring onions, saute them for a minute on high flame & turn off the flame
• Allow the stuffing to cool down completely
For Momos chutney Recipe -
• Heat up water into a sauce pan, once water starts boiling to this add tomatoes (give 2 slit cuts to each tomato), dry red chilies (kashmiri & spicy), garlic & ginger,
• cook tomatoes & other ingredients on low flame for 10-15 mins
• Once done, take the vegetables out & allow them to cool down
• Then take all the cooked ingredients to grinding jar, to this add salt to taste, sugar & black pepper pw (you can adjust the sugar, pepper & salt taste as per liking)
• once done our momos chutney is ready
How to shape momos in easy way-
• Now our dough is ready, stuffing has come at root temp
• Make small marble size balls from the dough, apply some oil to the dough balls & then dust some all purpose flour to prevent from sticking each other
• Roll 5-6 puri size dough, fill the enough amount of stuffing, shape the momos as shown,
• Keep the ready momos covered under wet cotton cloth & shape remaining momos
How to steam momos -
• Heat up water into a steamer, apply some oil onto steaming plate or use parchment paper lining
• Put momos onto the steaming plate & steam momos for 15 mins
• Follow the same process for the remaining momos to steam
