INGREDIENTS:
Recipe 1. Prawns in garlic in the oven:
Fresh or defrosted prawns, as many as you like.
3 cloves of garlic.
Fresh parsley.
Olive oil.
Lemon juice.
Salt.
Brandy or cognac.

Recipe 2. Clams in seafood sauce:
One kilo of fresh clams.
One onion.
Two cloves of garlic.
One tablespoon of wheat flour. (Cornstarch for celiacs).
One teaspoon of sweet paprika.
150 ml of white wine.
Fresh parsley.
Olive oil and salt.

Recipe 3. Octopus salad:
Octopus.
Red pepper.
Green pepper.
Red onion.
Fresh parsley.
Extra virgin olive oil.
Apple cider vinegar.
Balsamic vinegar.
Salt and pepper.

COOKING TIMES FOR OCTOPUS
Cooking the octopus is the most important thing, the time varies depending on the piece. Octopus should never be soft or overcooked, it loses all its charm and its texture becomes more like chewing gum.
1.5 kg piece - 20 minutes cooking + 10 minutes resting.
2 kg piece - 25 minutes cooking + 10 minutes resting.
2.5 kg piece - 30 minutes cooking + 10 minutes resting.
3 kg piece - 35 minutes cooking + 10 minutes resting.

Recipe 4. Small scallops au gratin.
Small scallops with the shell.
Onion.
Fresh parsley.
Paprika.
Olive oil.
White wine.
Breadcrumbs.

Recipe 5. Mussels in white sauce:
One kilo of fresh mussels.
One spring onion or 3 shallots.
Cooking cream or heavy cream with 15% fat.
Butter, 30 g.
White wine, 120 ml.
Pepper.
Parsley.
