I finally found this recipe! This apple cake convinced me the first time.
Soft puff pastry with apples and coconut combined with a delicate lemon cream. The cake looks great when cut and holds its shape well.

25×30 cm form
Puff pastry:
- 6 egg yolks
- cream 220 g / 7.7 oz
- flour 650 g / 23 oz
- butter 250 g / 8.8 oz

Coconut mixture:
- 6 egg whites
- 150 g / 5.3 oz sugar
- cornstarch 30 g / 1 oz
- coconut flakes 50 g / 1.7 oz

- apples 1.2kg / 2.65 lb
- kiwi-flavored jelly 90g / 3.1 oz

Cream:
- 500 ml / 17.6 oz milk
- 2 eggs
- 150g / 5.3 oz sugar
- zest and juice of 1 large lemon
- cornstarch 40 g / 1.4 oz
- 2 tablespoons flour
- 250 g / 8.8 oz butter
