Oheso Cafe & Bakery
Francisco Castella from Spain and Kyoko Yoda opened a cafe in 2011 in Sera-machi, Hiroshima Prefecture.
They began making bread to serve at the café, and later began baking bread in earnest, focusing on a process that uses sourdough and simple ingredients.
In 2013, they opened a bakery and introduced a series of new initiatives, including the introduction of high-speed freezing technology. In 2022, the company will start operation of a new factory to make up for the drop in café income due to the Corona disaster, and accelerate wholesale sales of sourdough bread.
The owner, Mr. Frank, is self-taught and multi-talented in everything, including baking bread and learning Spanish cuisine.
In this video, I interviewed him over a period of several months to follow his challenges at this bakery.
