If you want a delicious, healthy, casserole.. Please try this one.. How could you go wrong with ranch dressing, bacon, and sun dried tomatoes . Can be doubled or halved easily and freeze well also..

Preheat oven to 350 degrees

Recipe
4 cups steamed cauliflower
1/2 cup sliced carrots…steamed
8-10 sliced cooked bacon
1/2 heaping cup sour cream
1/2 heaping cup mayo
1 cup chopped onions
1 heaping tablespoon spicy ranch dressing or 2 tablespoons original ranch dressing
1 tablespoon minced garlic
1/3 cup chopped sun-dried tomatoes
1 teaspoon salt
1 cup chopped can green beans
1/3 cup shredded pepper jack cheese
1/3 cup shredded sharp cheddar cheese
1/3 cup shredded mozzarella cheese
(You may use only one cheese or whatever cheese you prefer . This is just what I used.)

Combine all ingredients, reserving half the cheese and half the bacon for the top..Mix well..pour in casserole dish10x7. Top with remaining cheese and bacon. I cut a few green onions on top. Bake 25 minutes 350 degrees..
